Avocado

Who does not like Avocados. I mean, they are so popular and healthy (in moderation), plus, there are so many dishes to make with them. We had this huge Avocado and I decided to make a healthy side salad to serve with some leftover Lasagna I made (see recipe under Main Dinner Dishes).

This recipe is for two people, so if you wish to serve this yummy salad for a larger party, just double up on the ingredients. Enjoy!

Prep time: 20 minutes; serves 2

Ingredients:

  • 1 large avocado, cut into bites size pieces
  • 1 large tomato, chopped
  • 1/2 English cucumber, sliced and then halved
  • 1/4 cup chives, chopped
  • 1/4 cup green onion, chopped
  • 1 garlic clove, chopped
  • 5-6 medium size basil leaves, ripped apart
  • 1 tbsp. avocado oil (substitute: garlic oil)
  • 2 tbsp. goat cheese, crumbled

Combine all ingredients in medium size bowl. Add avocado oil and sprinkle with goat cheese.
