Yellow Squash

Do you have some yellow squash and want to maybe try a new dish? Well, I have the perfect one for you. Yellow Squash Rice! One of our favorites we just cannot get enough of. It’s easy to make and leftovers can be stored for a day or two. Enjoy it just by itself or serve as a side dish.

Prep/Cook time: 30 minutes; Serves 4

Ingredients:

  • 2 tbsp. butter, salted
  • 1 tbsp. garlic oil
  • 2 garlic cloves, chopped
  • 1/2 cup green onions, chopped
  • 2 medium-large yellow squash, cleaned and diced
  • cracked pepper
  • 1 tbsp. kosher salt
  • 2 cups cooked rice
  • 1/2 cup chicken broth
  • 1/2 cup parsley, chopped
  • 1/2 lime

Heat butter and oil in large skillet to medium heat. Add the garlic and green onion; stir and cook for 3 minutes or until garlic is slightly browned. Stir in the yellow squash, cracked pepper, salt and cook for 7-10 minutes (the squash should not get to soft).

Add rice and chicken broth, turn heat down to a simmer and cook for 4-5 minutes. Stir in 1/2 the parsley and remove from stove. Squeeze the lime over the top and sprinkle with remaining parsley. Serve as a side with fish, poultry or meat.
