Tomato & Green Bean Pasta Salad

Green beans are available all year and there are so many recipes to use them. This lovely salad became a hit in our house and we will have it again soon. Not only can you serve it as a side for your dinner but you can also bring this salad to a party. Not only does it look good but it’s oh so tasty. Specially if you let it sit room temperature for several hours. Delish!

Total time: 50 minutes; Serves 6

Ingredients:

  • 3/4 lb. orecchiette pasta
  • 2 cups constellation tomatoes, quartered
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 med. size garlic clove, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 cup prosciutto, chopped
  • 1 1/2 tbsp. red wine vinegar
  • 1/4 cup olive oil
  • salt & pepper
  • 3/4 cup feta cheese, crumbled
  • 1/3 cup fresh dill, chopped

Add the green beans to a medium size pot of boiling salted water. Turn the heat to low and simmer the beans for 5 minutes. Prepare an ice bath and add the beans with a spider strainer. Let sit in ice bath until beans are cold. Remove from ice bath into a bowl and set aside.

To boil the pasta we will add a little more water and salt to the bean water and bring back to a boil. Add pasta and boil per the package instructions.

Using a large bowl combine the tomatoes, garlic, red onion, olive oil and red wine vinegar. Stir and season with salt and pepper.

Add the cooked pasta, green beans, half the dill and feta cheese. Toss to combine and then sprinkle with the prosciutto, remaining feta cheese and dill. Serve with Pork Chops, Chicken or just enjoy by itself.
