Chocolate Thumbprint Cookies

We were craving some cookies and with our love for chocolate, I came across a simple and quick recipe for Chocolate Thumbprint cookies. Bake them for family or bring to party. Believe me, they will be gone in a heartbeat.

Prep/Baking time: 1 hour; 24 cookies

Ingredients:

  • 1/4 cup all-purpose flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 stick butter, unsalted, softened
  • 1/4 cup sugar
  • 1/2 tsp. vanilla exrtract
  • 1/2 cup chocolate chips, any kind

Heat oven to 350°.

In a small bowl, whisk the flour, baking powder and salt together; set aside. Beat the butter until creamy and then add the sugar. Beat for 2 minutes until creamy; stir in the vanilla. Continue to blend in the flour until the dough is soft and a little crumbly.

Shape teaspoons of dough into a balls and place on parchment lined baking sheet. With your thumb, press a deep indentation into the center of each cookie. Bake the cookies for 15-18 minutes, until firm and lightly golden. Remove from oven and cool.

In a small glass bowl, melt the chocolate in the microwave for 20-30 seconds. Stir and melt a few more seconds if the chocolate is not completely melted. Spoon some chocolate into each cookie indentation and then let chill in the refrigerator for at least 30 minutes. Serve at room temperature.  In case there are any left, store in airtight container for up to 5 days.
