Fresh & Crisp Veggies
Vegetables and healthy salads are very important for your well being. Either one is served in our household every day and of course you want to keep them fresh after you bought them. So today I want to share how to keep certain vegetables fresh in the refrigerator and before cooking them.
Freshness
This helpful tip is to keep your veggies, lettuce and herbs fresh and applies to the following which have stems:
- Lettuce (all types)
- Asparagus
- Green Onion & Chives
- Celery
- Herbs (such as Cilantro, Parsley, Dill etc.)
- Rhubarb
When buying lettuce, certain vegetables and herbs you might not use them right away and automatically put them in the refrigerator. After a day or so you are ready to use one or the other and are shocked how your asparagus looks a little dry or your herbs just went blah. So this is what I started doing when it happened to me. Before placing all your veggies etc. in the refrigerator, remove the item from the bag, take a wet paper towel and wrap around the stems of the item. Return the item back into the bag and place in the refrigerator. By doing this, you are keeping the freshness of your veggies, lettuce and herbs a little longer. I am showing you a few examples below.
Crispness
This is a great tip to keep your veggies tasting fresh and crunchy before prepping and serving. This will apply to these yummy veggies:
- Asparagus
- Green Beans
- Broccoli
- Cauliflower
- Brussel Sprouts
Let’s start with asparagus. Cut the ends off, about 1/2 inch. Rinse and clean under cold water. Then grab a food storage container the length of the asparagus. Place the asparagus in the container, add water and ice so that all asparagus are covered. Set aside until you are ready for prepping them. By doing this you will keep the asparagus fresh and brightly green. The same goes for green beans. Rinse, break of the ends, place in ice water and set aside.
If broccoli or cauliflower is on your menu, we will first cut the florets just above the thick stem. Place your florets in a food storage container with ice water and set aside until you are ready to prep.

Can I use other dressings
Yes you can. I do not recommend thicker dressings. That will make the salad a bit mushy. Try some garlic olive oil and some white balsamic vinegar.
