Oatmeal Nut Raspberry Bars
Well, due to the amount butter used in this recipe, I cannot really say that these wonderful Oatmeal Nut Raspberry Bars are super healthy but they sure are good! Ask my husband, he had a few already, LOL!
The fresh raspberries give these bars such a good flavor and a nice little crunch from the nuts and oatmeal. If you are not a big fan of raspberries, try blue or blackberries instead. Both will taste just as good!
Total time: 1 hour; 9 bars
Ingredients:
- 10 tbsp. unsalted butter, cut into pieces, plus more for the pan
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp. vanilla extract
- 1/4 tsp. kosher salt
- 3/4 cup rolled oats
- 1/2 cup raspberry jam
- 1/4 cup pecans, chopped
- 1 cup fresh raspberries
- 1 8-inch square baking pan
Heat the oven to 375°F and butter the baking pan. Grab your food processor and pulse the flour, sugar and salt to combine nicely. Add the butter, yes, all that butter, vanilla and pulse just until the dough comes together. Move the dough to a bowl and gently add the oats.
Remove a half cup of the dough and press the remaining into the prepared butter pan. Mmmm, butter! Spread the jam evenly over the dough, leaving a 1/4 inch border around the edges. Scatter the nuts and the raspberries over the jam, pressing them down lightly, then sprinkle with remaining dough.
Bake until the edges are golden, between 25 to 30 minutes. Your kitchen will be smelling soooo good!
Remove from oven and let cool for 20 minutes before slicing. If you can wait that long!
