Salsa

I recently looked into my refrigerator and found an opened jar of Salsa. We love chips and salsa, but you can only eat so much of it and then the opened jar sits there. After checking the expiration date, there was still a few weeks left on the salsa life. So what better side dish can you make than Spanish Rice (aka Mexican rice)! Add some fresh ingredients and you have a wonderful side dish for your next Mexican Fiesta meal. And it’s so easy and quick to make. 

Prep/Cook time: 30 minutes; Serves 6

Ingredients:

  • 3 cups cooked rice, long grain (white)
  • 2 tbsp. garlic oil
  • 2 cloves garlic, chopped
  • 1 cup white onion, chopped
  • 1 green onion, chopped
  • 1 tbsp. green chili, seeds removed, chopped
  • 2-3 cups Salsa (whatever you have on hand)
  • 1 cup chicken broth
  • 1/4 cup cilantro, torn in half
  • 1 lime

Heat the garlic oil in a large skillet over medium heat. Add the garlic, white onion, green onion and green chilies. Cook until onion is slightly soft.

Combine the rice with the salsa and chicken broth. Cook and stir for 4 minutes. The rice should not be dry, so feel free to add a little more chicken broth and/or salsa.

Remove from stove into a bowl and mix the cilantro and squeezed lime into the rice. Garnish with more cilantro. Enjoy!
