Sausage, Tomato & Fried Egg Salad
Grilled sausage with tomatoes and a fried egg! WHAT! It’s sooo good. The sausage blends in so well with all the other ingredients that you really cannot stop eating it. I used mild Italian sausage but please use the sausage of your choice. Any kind will work. Oh, and do not forget to add that egg!
Prep/Cooking time: 1 hr; serves 6
Ingredients:
- 4 4-oz. mild Italian sausages, grilled, sliced in 1/2 inch pieces
- 1 cup baby mozzarella balls, halved
- 1/2 cup black olives, pitted, halved
- 1/4 cup pickled Okra, chopped
- 1 tbsp. minced garlic
- cracked pepper
- 1/2 tsp. smoked salt
- 2 tbsp. Queso Fresco
- Basil, small leaves
- 2 tbsp. butter
- 4 large Eggs
Dressing:
- basil olive oil
- red wine vinegar
Using a medium to large bowl, add the mozzarella balls, black olives, Okra and the minced garlic. Add some cracked pepper and the smoked salt. Stir and set aside.
Heat up the grill to high, indirect heat. Place the sausages on the grill and brown for 1-2 minutes. Turn heat down to medium and cook for 10-15 minutes. You have to make sure they are fully cooked but not dried out. Remove from heat and loosely cover with aluminium foil. Set aside.
Before starting the eggs, sprinkle the basil olive oil and the vinegar over the salad mixture. Heat up a large skillet, melt the butter and crack the eggs. While the eggs are cooking, slice the sausages and add to salad mixture. Divide into to four bowls. Place an egg on top of the salads, sprinkle with Queso Fresco, finish with basil leaves and serve. I suggest a glass of Rose with this dish. Enjoy!
